Gentlemen
I'm sure you guys are like me and have multiple different obligations with family, friends, co-workers, kids' friends, extended family, etc for the holidays.
Ms. MAT and I were talking about traditions and what we usually eat/cook around Christmas. Got me thinking. What are the staple traditions in your home? One of our first gatherings will be this weekend. I usually make a smoked gumbo and crawfish étouffée for this particular engagement. Curious as to what you guys serve.

Cheers Christmas Eve we usually had about 20-25 family members. But not this year. Played games, open gifts and had a table full of Hors d'oeuvres. Christmas day seafood gumbo with few family, 4-5 over. Ones with kids stayed home. Now New Years is a different animal. Roast beef, pork roast, ham, cabbage rolls, black eyed peas, potato salad and all the wine and beer you dare to drink. But that might have to wait until 2022. God willing.

We're going to make a chicken & sausage gumbo, a seafood gumbo, potato salad, and french bread. Might make some homemade non-aged egg nog too (Alton Brown recipe).

Now look, I’m as Cajun as they come but I don’t really get down with cow tongue. Or Ponse. But that sounds... unique. Tongue is delicious Matt.. thats a must have before the good Lord calls you home lol

Honestly, 99/100 people would think it’s a beef roast if you weren’t told it was tongue before you ate it. It’s really good.

In a vinegar or tomato sauce its heaven on a plate.

Especially stuffed real well... Have y’all done it in a deep fryer? I’ve never heard of that. Had it once like that.. it was fabulous ... the frying really takes any toughness out

I’ve had it before and maybe that’s true but I found the texture to be unsettling. And it was super heavy. Agree with you, Mat. Attended a crawfish boil last year and someone threw a tongue in the pot. The texture definitely got to my head. I like tongue and I don’t think I’d like it boiled...that sounds nasty and definitely wouldn’t cook long enough to tenderize it. I’ve always had it like smothered roast cooked low and slow for a long time
